The PISTON has come out too far to push it back using the Disk as leverage

          Silly question time !

Can you get a pallet knife and a screwdriver blade in there ?

Thinking of having the knife blade against the piston then lever using the screwdriver.

Theres to much Resistance. Ive removed brake pipe & bleed valve & its still tight.

I've had success before using a g-clamp to press a piston back in when changing discs. Can't say for sure that it will work on a surf as I haven't had the brakes apart yet.

The g-clamp I use has a bar rather than the 'wingnut' on the adjuster, which means i can use a large ring spanner to get leverage.

You what! The piston should push back in very easily unless you have dislodged the seal and jammed it between the piston and caliper somewhere other than the seal groove.
