Another thing springs to mind, there is a earth connection that bolts to the back of the block, right round the back, this gets left off when people swap engines, you don't need to touch it doing the head, but if its been taken off in the past, it might have been bolted back somewhere unusual and been missed putting the truck back together. Its the -ve for all the sensors and fuel pump, and the truck won't start with it not connected. See if you can feel it, or find it, its about 5mm lower than the block deck, facing the gearbox slightly to the passenger side of the block. its just a ring terminal on a couple of black wires.
