Engine too cool, runs like sh1te and excessive wear. Engine too hot, runs like sh1te, excessive wear and other possible failure scenarios.
Repeating a wrong does not make it a right. Whether they like it or not, the other mechanics and yourself are working upon a completely incorrect assumption that removal of the 'stat aids engine cooling. It does not. It can cause far more problems than it will ever cure.
With regards to your comparisons to race engines and the Surf, btw, they bear no relation whatsoever. The requirements and expectations for a race engine fall way outside of any expectations or requirements one would have for a domestic vehicle.
