Anyway, the point on the stat is that if you take it out the flow will be too fast and the coolant won't have time to cool down in the radiator. Assuming it's an auto, it will also lock you out of overdrive until it's heated up and various other things. Put a new one in. I would guess your racecar has a better radiator with no ATF cooler.
The rad caps normally get a hard time when the head goes, so you would do well to stick a new one on and replace the stat before bothering with a new pump. If you're lucky, the new head will have survived being overheated a couple of times.
