Im sorry to say you might have a busted head. From cold try running it with the rad cap off and see if it overflows straight away.

Try a new rad cap and stat as first ports of call.

are you sure,i thought the engine would overheat while moving to if the head had gone do you not think?

Have you tried opening the heater controls fully and running up from cold with the rad cap off? Rev the engine from the throttle linkage and watch the level. I had the same syptoms recently, caused by an airlock in the coolant. Also check to see if your viscous fan is locking when hot. When cold you can stop it quite easily with a rolled up newspaper. When hot it will bend the paper.Have a look in the FAQs bit for "Burping the cooling system."
I have never found it necessary to rig up the funnel, only to keep topping up as I see the level drop.

Good luck. Fingers crossed it's not the head.
        It's only a hobby!
