The thing is that my surf is sooooo capable in 2wd, I don't see the point of using the 4wd unless I really am spinning the back wheels and not going anywhere... Once I hit that 4wd button though, it just seems to pull through anything

Thats not the way to do it.
Get into 4WD, locked center diff, before you get to the gloopy stuff.
