The differnce between and estate, station wagon and a shooting brake is to do with the way the back door opens - the surf is technically a station wagon, but this is not a term often used in the UK.

Station wagon generally came from the term "depot Hack" which was used to define a vehicle used for carrying people and luggage. Also known as Suburbans or carryalls (GM still use the name Suburban on the big 4x4 long wheelbase estate).
End of anorac hour. I'll get back to trainspotting now.

Basically I think that the terms really relate what they were designed to be used for - Station wagon was for picking people up from the railway station back in the days of not many people having cars - Shooting brake was for that purpose - for hunting parties.
