Perhaps there was some damage when the truck first overheated.
Im afraid with my limited knowledge i cant help much mate. I can just assume something has bit the dust. Lets hope if it is a problem it wont take your wallet down with you!!!
HeHe roger that mate. Thats why im wondering about the pump, if it spins ok when "normal " driving, then when ya get up the top end of the revs it spins on its shaft and cant catch up then wouldnt the temp go up?

Do not run without a stat , it can make it overheat worse . It can cause the waterpump to cavitate and not circulate the water properly .
We used to remove the centere part of the thermostat for rallying , but leave the outer frame of stat to give a bit of back pressure to the pump .

i have come across water pumps where the impeller is loose on the shaft.and as the engine speeds up the impeller just spins on the shaft and that gave the same symptoms im not saying this is the case but it is a possiblity.

Don't rely on the toyota temp gauge, they are pathalogical liers, and as acurate as a polish builder.

Get an aftermarket temp guage fitted and find out what you "actual" running temps are.

Maybe it's your huge spotlights in front of the grille that are restricting airflow at speed, kinda deflecting it away instead of through the rad?

got the same prob on my truck fine about 70mph but push it up to about 85
and temp goes up , got new rad cap , thermostat, new atf ,come to the conclusion its rad that may need changing [i hope]

ps did read before about that bit of foam between rad and grill needs to be there to stop the air just flowing over rad instead of through it

Mine won't even get to 70mph since I had the head replaced.
