Caravan Recommendations

Being an experienced Caravanner and having just sold our 1991 Eccles Elite Jade, Steph and i are looking for a used van which will enable us to live comfortably on a good quality site with toilets, showers etc in France for 6 months of the year.(the summer months).
We have a fit and healthy 2.4 second gen.
We want to maximise our space so the bigger the van the better(twin axle preferred) but want to be able to tow it within the safe limits of the Surf.
Any suggestions?

I'm not sure about specific models but there are some nice caravans with fixed beds, saving the hassle of making the beds every night after sampling the wares of the local vinery. Continental models are a little wider than our home grown ones and the door is on the correct side for continental touring.
