I replaced 2 sets of Disks on 2 3rd Gen SURFS yesterday & its very easy in comparrison to the 2nd GEN.
1) Remove wheels.
2) Remove Brake Pads.
3) Remove Calipers
The Disks are not retained in anyway, The passenger side will virtually fall off, The drivers side might need a firm tap with a piece of wood.
Always fit in pairs & fit new pads as well.
You will need to break these in gently so as to not Warp the new Disks.
Give yourself a couple of hours for this job.
