They come with a ready made template - just take the steel gaskets off and draw around them.

The finished product doesn't have to look pretty but make sure you file down any sharp edges to avoid cutting yourself when you're working with them/around them in the future.

because your engine is turbo charged this causes a higher blow by than a naturally aspirated engine,thus breathes a little more heavily, i wouldnt worry about a small amount of oil around the turbo as long as its not pints of oil your losing its perfectly normal.
